- 1 cup raw cashews (soaked for 2-4 hours, then drained)
- 1/2 cup coconut milk (or almond milk)
- 2 tbsp maple syrup (or honey)
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- Pinch of sea salt
For the Toppings
- Fresh raspberries, blueberries, and blackberries
- Mint leaves
- Pumpkin seeds (optional)
- A dusting of coconut flakes or powdered monk fruit sweetener
Instructions
Make the BlueMAJIK Chia Puddding
- In a mixing bowl or jar, whisk together almond milk, BlueMAJIK® powder, maple syrup, and vanilla extract.
- Add chia seeds and stir well to prevent clumping.
- Cover and rfrigerate for at least 2-3 hours (or overnight) until it thickens into a pudding texture. Stir once after 30 minutes to distribute seeds evenly.
Prepare the Vanilla Cashew Cream
- Blend all ingredients in a high-speed blender until smooth and creamy. Add more coconut milk if needed for a smoother consistency.
- Chill in the fridge for at least 30 minutes before serving.
Assemble & Serve
- Spoon the BlueMAJIK® Chia Pudding into a serving glass.
- Add a generous layer of Vanilla Cashew Cream on top.
- Garnish with frsh berries, mint leaves, pumpkin seeds, and a light dusting of coconut flakes or monk fruit sweetener.
